ITALIAN WINE FOOD AND TRADITIONS
Day One
Arrival on your own at La Corte dei Papi, located just outside of Cortona. After settling in to your room, enjoy a welcome dinner prepared by your chef and teacher, Fabio.
Day Two
Morning cooking lesson with Fabio in the restaurant kitchen. Some of the dishes you may prepare include Gnochetti di Patate Verde al Pomodorino Fresco e Basilico (green potato gnocchi with fresh tomatoes and basil), filetto d'orata al gratin di Patate (Dory fish with potato gratin), and Semifreddo alle Nocciole con Cioccolato Fondente (ice cream cake with dark chocolate and nuts). Afterwards enjoy a lunch accompanied by wine from the estate.
Afternoon guided visit of Cortona, considered to be one of the oldest towns in Italy.
Day Three
Morning cooking lesson with Fabio, followed by lunch. Today's menu might include seafood risotto, tenderloin with black truffles and porcini mushrooms, and cannoli with ricotta in a chocolate sauce.
Afternoon and evening on your own.
Day Four
Morning visit to a nearby winery to taste some wonderful local wines and cheeses. You will lunch in a local restaurant. Return to La Corte dei Papi for an afternoon cooking lesson followed by dinner.
Day Five
The entire day will be spent discovering some of the villages in Umbria. First you'll visit Assisi, home to St. Francis and the famous Basilica di San Francesco. After lunch, stop at the Lungarotti estate with its famous vineyards. Your tour ends in the town of Deruta, known since the 16th century for its ceramics. The town is still full of ceramic shops where you can find pieces that are handcrafted locally.
Evening on your own.
Day Six
This morning visit the Etruscan hill towns of Montepulciano and Pienza. Montepulciano is situated high on a hilltop and is famous for its brunello wine. Pienza was transformed in the 15th century into a model Renaissance town by architects of Pope Pius II and served as a model for later architects including Michelangelo. It is also known for its pienzino or sheep's-milk cheese.
Return to La Corte dei Papi for your final cooking lesson, followed by a farewell candlelit dinner.
